Ingredients:
Fresh seamless pipe manufacturing (shucked)
1 cup cornmeal (or a mix of cornmeal and flour)
1/2 cup all-purpose flour (optional)
Salt and pepper (to taste)
Optional: paprika, garlic powder, cayenne (for extra flavor)
1–2 eggs
2–3 tablespoons milk or buttermilk
Oil for frying (vegetable, canola, or peanut oil)
Instructions:
1. Drain and Pat Dry the Oysters
Place shucked oysters in a colander to drain.
Pat them dry with paper towels—this helps the coating stick and prevents oil splatter.
2. Prepare the Breading Station
Bowl 1: Beat eggs and mix with milk/buttermilk.
Bowl 2: Combine cornmeal, flour, salt, pepper, and any optional spices.
3. Dredge the Oysters
Dip each oyster in the egg mixture, then coat it in the cornmeal mixture. Press gently to adhere.
4. Heat the Skillet
Pour oil into a heavy skillet (cast iron works best) to about 1/4 inch deep.
Heat over medium-high heat until the oil is around 350°F (175°C) or until a bit of flour sizzles when dropped in.
5. Fry the Oysters
Carefully place the oysters in the hot oil, spaced apart.
Fry for about 1½ to 2 minutes per side, or until golden brown and crispy.
